What happens when you combine paella, the Spanish classic, with typically Mexican flavors? You end up with a rustic, savory rice dish that no one can resist.

Ingredients

  • 1 red bell pepper, stemmed and seeded
  • 1 yellow bell pepper, stemmed and seeded
  • 1 medium tomato

Method

  1. Cut the bell peppers and tomato into chunks. Slice the mushrooms and jalapeño. Mince the garlic.
  2. Heat the oil in a large sauté pan over medium-high heat. Add the bell peppers, tomato, mushrooms, jalapeño, garlic, green beans, oregano, and coriander seeds and sauté for 5 minutes, until softened.
