I make this on-the-go breakfast treat with pantry staples and items that have a long life in the refrigerator or freezer. You’ll have a delicious and healthy offering for company—or any night when you don’t want to make a run to the market for other ingredients. I use dry (not packed in oil) sun-dried tomatoes because they are easier to chop. Use oil-packed, if preferred, but make sure they are well drained. If desired, you can add about 3 slices of cooked and chopped bacon or ½ cup cooked
