The chocolate truffle torte here is layered with chocolate ganache buttercream and fresh raspberries with lashings of poured chocolate ganache. To finish I have dressed the cake with fresh berries and hand-moulded chocolate roses.

Ingredients

  • 8 in chocolate truffle torte, layered with chocolate ganache buttercream and fresh raspberries, placed on an 8 in board

Method

  1. Place the prepared cake on a wire rack over a sheet of non-stick baking paper. Liberally pour ladlefuls of the chocolate ganache over the cake. Make gentle circular swirls with the base of the ladle over the ganache to encourage it to run down and coat the sides of the cake.
