Russia’s traditional Easter dessert, very rich and delicious, is made with the first spring milkings. The Russians use a special wooden mold to drain the curd. Since the shape should be high and light, a clean flowerpot lined with muslin is a good alternative. No cooking is required, but it’s best to start the day before so that the curd has a chance to drain thoroughly.
