It is absolutely finger-licking because of the texture of the aubergines covered with the pesto sauce’s intensity, which forms a great umami in your brain. I actually nickname this dish ‘the ultimate pleasure’; many people underestimate the flavours of basil mixed with plain grilled or roasted vegetables; it is, in fact, mind blowing.
