This unique potato salad is the shining star of my table; I throw around 2-3 kgs of these potatoes every time someone is around and friends always ask me to throw them with gifts of my personal homemade pesto. I should start selling them and make more profit actually.
Once the potatoes are cooked, place on the side and allow to cool slightly, as they can crisp a bit in the air.
In your desired bowl, rub 1 tbsp of the homemade pesto all around the bottom evenly.
Place the potatoes into the bowl and add another 2 tbsps of pesto and mix evenly together.
Serve just like that or on a bed of fresh lettuce.
