Ingredients: 900 g frozen or fresh peas; 900 g frozen or fresh peas; 12 shallots, peeled; 1 carrot, washed and sliced; 2 good-sized potatoes, washed, peeled and diced; 5 spicy sujuks (Halal), peeled and sliced; obviously, this can be substituted for non-Halal chorizo. Thinking about a variety of soups seems an easy task; unfortunately, it may be the case, but not to me. I don’t know whether it is to do with my upbringing or to do with the origin of the Lebanese cuisine, where people don’t often enjoy soups as much as they enjoy a variety of mezze and other main courses.
