Wash the carrots, sweet potato and chop them roughly, peel the onions and chop them too.
Into a pot, add the knob of butter with the vegetable oil and throw in the onions and sauté until translucent. Add in the sweet potato and carrots, give them a stir and reduce heat to the lowest possible and allow to steam with the lid on for about 10-15 minutes with occasional stirring.
