This recipe is inspired by the traditional opera cake. Layers of almond sponge, or joconde, coffee buttercream and chocolate ganache make it one of the most classic French pastries around. Here I’ve given it a twist by replacing the coffee and chocolate with passionfruit and matcha. The acidity of the passionfruit is a great contrast to the earthy matcha tea.
