The Italians are justly famous for their liver dishes, and they love to cook them with onions or sage. So do I. This is my favorite way to eat liver. It is a quick meal, but does need your full attention so it doesn’t overcook. Serve it with a watercress salad.
In the summer, try grilling liver. Replace the dusting of flour with a brush of olive oil and grill quickly over high heat. Add the vinegar to the onion mixture and serve alongside the liver.
