This is a lovely quick recipe that’s light on prep for busy nights. If you want to make it vegan, use vegetable stock and leave out the Parmesan. Look for DOP San Marzano canned whole peeled plum tomatoes, which are a little more expensive than the regular ones but are worth every cent. They’ve got the most fantastic flavour and will elevate this dish into something special.
