This is a dish introduced by Jewish immigrants from Iraq called t’bit, made by slow-cooking chicken in aromatic red rice. Each family has its own take on this dish. My old neighbour used to cook this and every time the wonderful aromas would waft through our window, making everyone hungry. It took me a while to fully replicate it, until I realized that cardamom was the missing ingredient that provided the dish’s distinct flavour and aroma.
