Mexican Beef & Guinness Stew

On Sundays, my grandma often had a stew slow cooking in an electric roaster sitting atop the yellow clothes dryer in her kitchen. If I close my eyes, I can smell my grandma’s cocina filled with delicious aromas and hear a house full of laughter. How that small roasting pan filled with stew served so many visitors I’ll never know. This stew is inspired by my grandma’s recipe, but I flavor it with Guinness stout to give it an Irish accent.
