I call this the “Queen’s Guacamole” because of the unusual presentation: the guacamole goes back into the avocado halves after the fruit has been removed, and then each stuffed avocado half is presented on a glittering mountain of crushed ice, fit to serve royalty!

Ingredients

  • 4 ripe avocados
  • 1 jalapeño or serrano chile
  • 1 bunch fresh cilantro

Method

Halve and pit the avocados. Score an avocado half with a knife to create cubes, being careful not to pierce the skin. Ease a spoon between the skin and the flesh and gently scoop out the flesh into a bowl. Preserve the avocado skin to use for serving. Repeat with the remaining avocado halves.
