Nothing cooks faster than a tuna steak, but it needs some heft to go along with it. Sweet oranges, salty soy sauce, briny olives, and bitter endive make for the perfect quick combination to hit every note with very little work. The key here is to not be afraid of higher heat, and to make sure you have fresh tuna that can be at its best when it’s on the rarer side. If you have a large griddle pan, you could even make everything all at once other than the sauce. Who wouldn’t like a meal speci
