A traditional carrot cake is probably my favourite bake of all. The cardamom enhances the spices with a lemon and mint hit. Always use the seeds from cardamom pods if you can, rather than pre-ground.

Ingredients

For the cake

  • 100 g soft brown sugar
  • 1 egg
  • 70 ml

Method

Preheat your oven to 150°C/300°F.

Cream your brown sugar and egg together before slowly whisking in the vegetable oil.

Add your grated carrot along with the raisins. Coarsely chop your shelled pistachios and stir in.
