These can be served as part of a barbecue spread or cooked in the oven and served with couscous and salad. They also make a great lunch stuffed into warmed pittas with salad and the herby yoghurt. Once prepped, they freeze well too – another reason to make extras!

Ingredients

  • 800 g lamb mince
  • 1 onion, finely chopped

Method

Combine the lamb mince with the onion, garlic, breadcrumbs, egg, harissa, coriander, salt and lemon zest in a large bowl until well mixed.

Using your hands, divide the mixture into 24 balls approximately 6cm in diameter. Thread 3 balls onto each skewer, then shape them into ovals. Refridgerate for at least 10 minutes to firm.
