This iconic noodle dish originates from Sichuan street food. Slightly sweet, slightly sour, with a little kick, this simplified recipe allows you to get your noodle fix in about 20 minutes.

Ingredients

  • 2 tbsp groundnut oil
  • 400 g pork mince
  • 4 nests of dried medium

Method

Heat the oil in a pan and add the pork mince. Break it up and let it colour for 10 minutes. Don’t move it around too much as you want the edges to catch and go crispy.

Meanwhile, cover the noodles with boiling water and set aside.

Depending on how lean the pork mince is, you may need to strain off some fat at this stage. Add the garlic, ginger, spring onions, soy sauce, rice win
