This is a play on the plain ptysie that zips up the whipping cream with spicy ginger and balances it out with a sweet-sour rhubarb compote. While this dessert takes advantage of springtime rhubarb, you can substitute any number of fruits that pair well with ginger, like black currants, raspberries, strawberries, apricots, plums, and pears. Simply let your fruit rest with the sugar and spice until it has leaked out its juices, then cook into a quick fruit topping, just like with the rhubarb
