The honeydew for this recipe should be almost overly ripe. The drink is serene light green–serve in a clear pitcher and glass to grasp the full effect.
Ingredients
2cucumbers, preferably English cucumbers, peeled and coarsely chopped
Combine the cucumbers, honeydew, and mint in a blender. Add ½cup of water and purée until smooth. Strain the juice of seeds into a very large pitcher. Add the lime juice, zest, sugar, and 2 quarts of water. Stir to dissolve the sugar and chill thoroughly before serving.
