This light and zesty cake makes a refreshing change to a traditional heavy fruit cake. Make the moist sponge bases a day ahead, or bake and freeze them to keep life simple over the holiday, so that all you have to do is add the very easy filling and decoration. Eat on the day it is made.

  • 225 g/8 oz/1 cup unsalted butter, softened, plus extra for greasing
  • finely grated rind and jui

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Grease and line two 20 cm/8 in
