These truffles are very easy and fun to make. I find that Lindt baking chocolate (51% cocoa solids) has a good balance of sweet and bitter flavours (aim for at least 50% cocoa solids baking chocolate). The tahina (tahini) gives a creamy smoothness to them and the scant pinch of paprika leaves a warm spicy feeling in the mouth right at the end.
